JOB SUMMARY
We are looking for an experienced, creative, and hardworking head Chef to join our team and build a professional culinary culture! Located at the base of Crested Butte Mountain Resort, Butte 66 is a smokehouse concept style restaurant which offers gorgeous views of the peaks. This Chef is responsible for the overall food quality through menu planning, food production, and delivery service for a high traffic establishment!
RESPONSIBILITIES
- Scheduling of staff and performance reviews of staff to budgeted labor.
- Assist by resolving payroll exceptions, approvals, and labor distribution reports
- Ordering/receiving, cost transfers, variance reports and inventory control of all culinary items such as:
food, beverages, supplies, etc. purchased for the entire building
- Ensure that company guidelines for purchasing to GPO program is being followed
- Conduct daily departmental line-ups, routine line checks, as well as maintain food quality of all food served and produced
- Ensure entire outlet operates under HACCP guidelines and adheres to ServSafe Culinary Guidelines
- Hiring, developing, and training of a stellar, culinary team
- Lead all composting and recycling programs
QUALIFICATIONS
- Culinary Degree is preferred
- 3
years in high traffic restaurant operation
- Minimum 3 years of management experience
- Familiarity with purchasing systems, MS Office Suite, and Outlook
- Work all holidays, and most weekends, during summer and winter seasons
The budgeted range starts at $42,000-$55,250. Actual pay will be adjusted based on experience.
